Episode 61: The Chef Bringing Bush Foods to the World

LISTEN HERE In this episode of ExtraVirgin Food & Travel we talk with Dale Chapman, a Kooma Yuwaalaraay woman, chef and bush tucker advocate, who is passionate about bringing Australia's indigenous foods into everyday cooking and to educate about their incredible health benefits. For example, did you know the the Davidson Plum, has 100 x more vitamin C than oranges- the highest amount in fact of any natural food in the world? Or that lemon myrtle has high amounts of lutein that can stop macular degeneration and cataracts?

There is plenty of ongoing research about these superfoods and their possible use in everything from the treatment of diabetes to the cancer.

Best of all, these 'bushfoods', regional to the diverse regions of Australia are not only good for us, but taste good and they are helping to support aboriginal communities who grow and harvest the, as well as contribute to our understading of the world's oldest living culture.

Keen cooks will appreciate Dale's insights into the flavours and uses of bush tucker such as in this recipe for wattleseed cheesecake you can make at home.
